It’s officially the season for all things pumpkin, and what better way to enjoy it than in this raw chocolate pumpkin mousse. Sweet, creamy and delicious, each spoonful tastes just like autumn! Get your spoon ready and enjoy this dessert all month long!
This Raw Chocolate Pumpkin Mousse is:Vegan, Gluten Free, Refined Sugar Free and Nut Free (if you omit the walnut topping)
2 cups of coconut cream
1 cup of pumpkin puree
¼ cup CHOC Chick cacao nibbles
¼ cup maple syrup
2 tbsp CHOC Chick cacao powder
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
A sprinkle of chopped walnuts
A sprinkle of CHOC Chick cacao nibbles
A dusting of cinnamon (optional)
To make the raw chocolate pumpkin mousse, place all of the ingredients into a high powered blender or food processor and blend until smooth and creamy.
Divide the mousse between 3 ramekins (approx. ¾ cup per ramekin), then place in the fridge to set for up to 1 hour (if you can’t resist waiting it’ll taste just as good as it is).
Before serving, top each mousse with chopped walnuts, cacao nibbles and a dusting of cinnamon if desired.
Keep in the fridge for up to 3 days.
