Mint Chocolate Dirt Cups

Made with a creamy chocolate pudding and chewy crumble topping these mint chocolate dirt cups are a fun, chocolaty treat that can be served as a healthy dessert or snack.

Makes: 4 servings

Chocolate
¼ cup. + 2 tbsp. CHOC Chick cacao powder
1 ½ cup. cashew milk
¼ cup. chia seeds
6 medjool dates, destoned
1 tsp. peppermint extract

‘Dirt’
1/3 cup. mulberries
½ cup. hazelnuts
2 tbsp. CHOC Chick cacao butter, melted (20g/16 beans)
3 tbsp. CHOC Chick cacao powder
2 tbsp. maple syrup
Pinch of salt

Toppings
Fresh mint
Strawberries

To make the chocolate layer, put all of the ingredients into a blender and blend until smooth. Divide the mixture between 4 small glasses and put to the fridge to thicken up.

To make the ‘dirt’, put all of the ingredients into a food processor and process until a crumbly mixture has formed. Divide between the 4 glasses and if you have any leftover store in a tupperware.

Serve with fresh mint and strawberries.
