Easy Breakfast Pancakes with Cacao Butter

Malwina, our friend and CHOC Chick fan @maalwciaa has created these divine pancakes and kindly let us share them with you! Easy to make with oatmeal, natural yogurt, banana and egg, cooked with CHOC Chick raw cacao butter.

Makes: Approx 12

3 tbsp of rolled oats
1/2 tsp baking powder
3 tbsp natural yogurt
Half a banana
1 egg
1/2 tsp vanilla
Fresh or frozen blueberries, plus more for serving
CHOC Chick Cacao Butter for frying

Place all ingredients except blueberries into a blender.

Blend until smooth. You may need to add a teaspoon or two of almond milk if batter is too thick. Set batter aside to thicken up for a few minutes. If batter is too thin, add a tablespoon or two more of oats and blend again.

Lightly coat a large non-stick pan with CHOC Chick Raw Cacao Butter over a medium low heat.

Spoon batter onto pan. Add a few blueberries on top. Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside. Wipe pan clean and repeat with more raw cacao butter until all the batter is gone.

Served with favourite fruits, I used strawberries and pomegranate.

Drizzle with maple syrup and sprinkle some coconut chips for extra crunch.
