We are incredibly fortunate to have the most amazing customers and one particularly wonderful customer has been sending us such CHOCtastic recipes, that we've asked her to co-edit our recipe page this month (a bit like Lady Gaga and London's Metro Magazine). Here is CHOC Chick Brenda's amazingly CHOCalicious recipe for spring inspired raw chocolate that is a total delight to the senses, enjoy!
As we've been having such beautiful warm weather, it got me thinking about how to give my raw chocolates a taste of spring. Several experiments later and I came up with this recipe showcasing spring green pistachios and fresh lemon. I love chocolate with lemon! There is something about the confident zing of fresh citrus that combines perfectly with rish, smooth raw chocolate. The pistachios add some crunch and colours, and their biscuity flavour alongside the softr chewy raisins successfully rounds off this zenty combo.

Chop the cacao butter into small chunks and place in a bowl along with the Sweet Freedom and vanilla. Melt gently over a bain marie. When the butter has melted, whisk in the cacao powder and then some lemon zest: I would suggest adding the zest about a 1/4 teasp at a time, tasting as you go until you get the perfect lemon flavour. I like mine quite sharp but everyone's different! Of course you can always add more sweetener as well. Pour the mix into moulds or plastic tubs and sprinkle the raisins and pistachios over the top. Leave in the fridge or freezer to set.
Although these chocs are lovely to nibble on at any time......including breakfast, I know because I tried..... I also made a quick dessert by placing some generous chunks of chocolate on a platter, along with slices of organic apple drizzled with honey and a squeeze of lemon juice. Well, I had a bald lemon to use up! The flavours are clean, crisp and fresh and it makes a lovely, guilt-free end to your meal. What more could you want?!
