Although CHOC Chick already has a lovely raw chocolate truffle recipe (which you will find in your CHOC Chick recipe booklet), I have just discovered two amazingly delicious but very decadent truffle recipes and have adapted them so you can make them with raw chocolate to slightly balance out the decadent bit.
Seeing as the economy is down the pan and Christmas is on its way, what better way to brighten up these next few months than by making some delicious and slightly decadent truffles to get us all in a more festive mood?

Gently melt the raw cacao butter in a bowl over a saucepan of hot water. Once it's melted, add the raw cacao powder and agave syrup (taste it before it cools and experiment with the quantity, more powder makes a slightly harder mix but more chocolaty taste and more agave obviously makes the chocolate sweeter). Once you have the right raw chocolate mix, take the bowl off the heat and beat in the butter, rum (or water), milk and almonds. Leave to set for an hour.
Once the chocolate has set: Roll a teaspoon sized piece of the mixture in your hands until it is shaped like a ball. Roll it in raw cacao power, cinnamon or desiccated coconut and pop it a little paper case.
