CHOCalicious Raw Chocolate Cake


This is honestly THE most amazing raw chocolate cake ever! And it’s sugar free, gluten free, and egg free and absolutely CHOCfull of goodness. I made this cake for my daughter Ella’s birthday and it was one of the many puddings and cakes on offer but this was definitely everyone’s favourite!

CHOCalicous Raw Chocolate Cake

Ingredients:

*Serves 6-8

Directions:

  1. Blend pecan nuts and salt in a food processor until finely ground.
  2. Add dates, raw cacao powder, Sweet Freedom and vanilla, process until mixture begins to stick together.
  3. Add the water slowly and process briefly.
  4. Line a dinner plate with greaseproof paper. Add the mix and form into a 5-inch round cake.
  5. Wrap the cake in the greaseproof paper and place in the fridge for around 30 minutes to set.

While it sets happily, you can make this delicious icing or CHOCfrosting or if you prefer it without any icing and are slightly impatient (like me), simply cut up into squares and eat as brownies!

CHOCtastic Raw Chocolate Frosting

 Ingredients:

Directions:

  1. Melt the raw cacao butter in a bowl over a pan of boiling water.
  2. Once melted, remove from heat and add the cacao powder, salt, Sweet Freedom, vanilla and mix well with a metal balloon whisk.
  3. Once blended add the cream and mix again. The consistency will become thicker as the cream is added.
  4. Leave for a few moments to thicken and then simply spread over the CHOCalicious Raw Chocolate Cake.
  5. Garnish with raspberries and place in the fridge to set for around 1-2 hours.
