Chocolate Bubble Tea

A delicious sweet chocolate milky tea served with chewy tapioca pearls. Best served chilled on a hot summers day, or warm when it’s a little cooler outside. Top with cream and a dusting of cacao powder for a real treat!

This Chocolate Bubble Tea is: Vegan, Gluten-free, Nut-free & Refined sugar-free

Makes: 2

800ml dairy-free milk (oat milk works best)
2 x tea bags
1 tsp vanilla bean paste
3 tbsp CHOC CHICK Cacao Powder (plus extra for dusting)
1 tbsp sugar
½ cup tapioca pearls, uncooked
 
To Serve

Bring to the boil 5 cups of water (1200ml) in a large pan. Add in the tapioca pearls and then reduce to a medium heat.
 
Cook for 2-3 minutes, until the pearls begin to float. Remove from the heat and transfer the pearls into a bowl of cold water, to remove any residue. Dry off, and set to one side.
 
Add the milk and tea bags to a medium sized pan and gently simmer for 10 minutes.
 
Remove from the heat and whisk in the cacao powder and vanilla bean paste.
 
For a chilled tea, allow it to cool before serving.
 
Divide the cooked tapioca pearls between two jars and pour the chocolate tea over the top. Serve with whipped cream and a dusting of cacao powder.
